Omelette with Pancetta Superba
Steamed vegetables and ancient mustard

Pancetta Superba


Eggs (4)

Grana Padano cheese (50 g)

Butter (1 knob)

Extra Virgin Olive Oil

Salt to taste

Pepper to taste

Pancetta Superba (3-4 slices)

Steamed vegetables (carrots, courgettes, peppers, etc.)

Ancient mustard


  • Make the steamed vegetables separately, which will be used to fill the omelette. 


  • Shell the eggs in a bowl, add a pinch of salt, a grind of pepper and the Grana Padano. Beat them with a fork and prepare the omelettes. 


  • Melt a knob of butter in a frying pan and when it sizzles pour in the egg mixture. Cook until a light crust forms on the bottom.

  • Lay a few slices of Pancetta Superba on half of the surface, the previously cooked vegetables and add ancient mustard.


  • Fold up and serve.
